Tackling Food Waste Through Education & Innovation

Each year, Ireland wastes around 750,000 tonnes of food—a staggering figure with huge environmental consequences. But change is possible, especially in how we educate future leaders in hospitality and foodservice.

That’s where FoodTuristic comes in. Funded under the Erasmus+ Key Action 2 framework, FoodTuristic addresses the green skills gap in European culinary and hospitality schools across Europe. Led by the Technological University of the Shannon: Midlands Midwest (Ireland) the consortium also includes Munster Technological University (Ireland), Lycée Hotelier de Dinard (France), the Institute of Tourism Studies (Malta) and the Vocational College of Hospitality and Tourism Maribor (Slovenia).

Through this project, we are:

  • Educating students on how to reduce food waste using technology
  • Supporting local food growing to cut food miles
  • Introducing circular food systems via composting, gas harvesting, and upcycling food waste

The project spans a range of activities including the delivery of real-world tools like:

  • A free training course (digital badge certified led by the MTU team of Dr Noel Murray and Dr Colum Gibson)
  • A mobile app
  • A practical guide for educators

We’re building a future where every foodservice professional is also a climate action leader.
